Matthew joined the team at Llys Meddyg as Head Chef in the summer of 2010, and has recently moved on to work with Heston Blumenthal at the acclaimed Dinner at Mandarin Oriental. However, Matthew still maintains close ties with Llys Meddyg and wishes to support the Pembrokeshire restaurant’s patronage of Chefs’ Night Out.
Prior to coming to Llys Meddyg, Matthew worked under Emily Watkins at the Kingham Plough in Oxfordshire. Emily was the Sous Chef with Heston Blumenthal at the Fat Duck and the enthusiasm for seasonal, locally sourced food hugely inspired Matthew. ‘Modern, British, witty, clean and fresh’ are some of the words that have been used to describe Matt’s plates.
